On arrival at the sushi school, you’ll be greeted by an experienced YO! The book lamented the fact the city was “like everywhere else”, describing its “surfeit of innocuousness”. Bill’s opinion was in part shaped by a doomed attempt to find somewhere to eat, his unsatisfied “hankering for something different”.
He was confronted by the type of chain restaurant you might find in any town. The young are drawn to these establishments, possibly for the same reason. They can give Aberdeen a big city feel. When I asked my son where he wanted to eat as a pre-cinema treat at Union Square it was always going to be YO! It’s not just the food he likes, but the whole experience. The chefs stand just yards from you, centre stage, wielding knives like ninjas as they prepare fresh food. You help yourself to small plates – colour-coded for price, ranging from £2 for salads to £6 for the likes of seared tuna and caviar sashimi – that circulate on a conveyor belt, model railway style. It’s simple, fast, and pleasingly informal. In no particular order we derailed custard dorayaki – filled pancakes with a raspberry-style sauce – a California roll (filled with fish paste) and a kaiso salad, containing soft marinated Japanese seaweed. There are dozens of dishes to pick from, with plenty of vegetarian options and quality beef on offer too.
Ingredients like ginger and sesame add accent to the meat and veg and many come with rice and noodles. You can order hot food with the press of a button. The chicken katsu (deep fried in bread crumbs) and teriyaki (grilled and coated with sweet and sticky soy sauce) will have you reaching for a second dish.The portions are small, you’ll probably start eating within minutes of sitting down, so you can rack up a big bill. We’d nine plates in all but you should reckon on getting into double figures for two. Really, that’s because the food’s great and it’s a fun place to dine. The green tea is fantastic, much less bitter than black. My son had a soda and the need to manfully break the seal, which provided a further piece of theatre. It’s perhaps unfair to be snooty about chain restaurants when many franchises were spawned from local successes. They work for a reason, a formula tested across the cities, countries, even continents. That doesn’t make for a lazy approach.
