I’m a big eater and always have been, it’s part of the reason that I gained so much weight in the first place, and as such I’ve never been one for diddy meals and endless salads…especially not for dinner! I think this is one of the reasons that Slimming World is the only plan that has ever really worked for me. This meal is one of my new go to evening dinners, because it’s absolutely mouthwateringly amazing, totally syn free and seriously substantial! Are you as done with all of the bad food as I am?! This Christmas has been great but I’ve gained a good half stone (no exaggeration) and I am properly ready to get back on it and lose that half stone and then the rest too! One of the things I love about eating healthily is that it is so much more colourful than eating unhealthily! Case in point this delicious, and totally syn free, stuffed butternut squash which is not only one of my most delicious recipes of recent weeks but also one of the most beautiful! I’m a pizza addict and I just can’t seem to help it! Give me the option of eating healthily or stuffing my face with pizza and invariably I’ll give in and do the latter, but now…I can do both because this pizza is totally syn free and even perfect for an SP day! Ideal for getting back into the swing of things in the new year it’s the ideal, low carb, alternative to greasy takeaway and that is unbeatable in my opinion! Sushi is without a doubt my favourite food! I adore it and consequently spend a ridiculous amount of money on it every month. I also pretend to myself that sushi from my favourite high street restaurants (naming no names) is a lot healthier than it is. The reality however is that proper sushi can be very high in sugar and therefore very high in sys, as well as very unfriendly on your pocket!

For a long time I’ve been telling myself that I was going to start making my own sushi at home, but frankly I’m a bit crap at rolling it with the bamboo mat and so I had kind of given up….until I discovered the Sushi Bazooka! As you can see from the video and recipe below, it’s basically the world’s most useful gadget for sushi lovers and helped me knock this perfect sushi out in next to no time at all! Christmas is my favourite time of the year and this year has been just as wonderful as every, however no that I’m on my Slimming World journey it does bring with it another layer which in Christmases past I would never have even considered. After all of the festivities are over it will be time to face the inevitable wave of guilt that comes with having not been on plan for a good few days. If you’re like me and took the Christmas period as a break from weight loss then you’ll understand what I mean, and although I have absolutely not let it dampen my good time it has most definitely been in the back of my mind over the recent days.
