Arrived with an open mind but no specific expectations and this turned out to be a great experience combining new cooking skills, a delicious lunch and an insight into Japanese culture.This takes place in Hashi's brand new kitchen. We were in a group of 7 people which worked really well. Hashi starts by going through some basics of Japanese cooking (key ingredients and best places to source them) and then the fun begins. The experience is a great balance between observing a professional chef, practicing your sushi making skills and tasting it all. I came across Reiko's cookery school by accident; a few years ago I was looking for a Japanese cookery book and after a lot of research chose her book 'Hashi a Japanese Cookery Course' (which I highly recommend by the way!).
From it I discovered the existence of the cookery school at her home in Wimbledon Park. A year or so later we moved to the area and I was very keen to take a course. After persistent hint dropping to my now husband he eventually booked us into a gyoza class as a birthday present. We both thoroughly enjoyed it and I immediately caught the bug for Japanese cooking. As soon as I had the opportunity I booked myself on to Reiko's 'Home Cooking' course. Reiko is very warm and engaging and her home is beautiful and welcoming. I got on well with my fellow student (sharing a passion for great food as we did) and so each class actually felt more like a girls' night in with friends, in a lovely setting with amazing food. I was very sad indeed when the four week course came to an end and promptly booked myself on to the 'Gourmet Course'. This course is less hands on and more of a 'Chef's Table' experience. My particular favourites so far have been Beef Tataki, Tempura Soft Shelled Crab, Chiriashi Zushi Salmon Speical, Ganmodoki Tofu in a thick clear broth (surprisingly so -I never thought I'd be including tofu in a list of favourites!) and simply heavenly Miso Black Cod. We are very lucky to be served four incredible dishes in each class, all carefully thought out and well balanced. I should also mention that I had been a little apprehensive about attending a course on my own. If you have the same reservations definitely don't let this concern you, you will immediately be made to feel comfortable. Aside from the food the other thing which is so great about the course is the atmosphere created. Reiko is excellent at engaging everyone and encouraging interaction. We all share a love of Japanese food and get very excited by the dishes so camaraderie is naturally established, there is a lot of laughter and you very quickly feel as though you are among friends. I wholeheartedly recommend this experience in fact I implore you to do it, you will not regret it. You will enjoy yourself immeasurably, be spoiled with four exquisite dinners, likely meet some great people and become everyone's favourite dinner party host when you show off your new skills. My husband has certainly enjoyed trying out all the new dishes in my repertoire from easy weekday supper dishes to dinner party show stoppers.
I don't want my Japanese Thursday nights to come to an end, I already have an eye on Reiko's other classes and courses and eagerly await the launch of her new book in January. Thank you Reiko for the all the utterly delicious and unforgettable experiences, your cookery school is truly unique and an absolute pleasure to attend. I went to Reiko's sushi and sashimi class this weekend with my boyfriend for his 25th birthday present. I spent a long time researching which class to go for as there is such a choice across London these days, with the selling point for me being one that includes sashimi (where to buy and how to slice), which this certainly provided. A lot of classes seemed to cost a bit less than Reiko's class, but were shorter in length and only offered experience in maki rolls. So yes, this class costs more but is by far the most valuable. Reiko spent 4 hours taking us through everything from miso soup, to rolls, to sashimi and nigiri. Plus, the classes are small so you get plenty of practice and chance to ask questions.
Reiko herself is very friendly, welcoming and brilliant at what she does which made the experience so enjoyable. At the end of the class you get the chance to sit down, chat and eat the food you have been preparing, and it's even finished off with sake and green tea ice cream. Thank you so much Reiko, for the wonderful experience, it was worth every penny and I'd recommend it to anyone who loves sushi! This class was held to extremely high standards and the food was amazing. It's given me the skills to throw an amazing dinner party. The kitchen is beautiful and the atmosphere was relaxed.I would highly recommend. The Reiko/Hashi cooking experience was an amazing experience from start to finish. What can be quite an intimidating cuisine and skill from a beginner level, Reiko makes the fine art of Japanese cuisine accessible to all. I walked away with both an ambition to learn more and pragmatic, usable advice and skills to ensure that I take what I learnt and put into practice.
