jiro dreams of sushi apprentice seattle

I see a sushi restaurant listed at Pike Place Market (Umai Sushi & Teriyaki), but I can't really find any info online for it. I was hoping to see a menu ahead of time. Can anyone vouch for the quality of the food? My kids are sushi addicts and I know we'll be hitting up Pike Place our first night in town so it would be convenient to just grab a bite to eat there. Also, does anyone know of any sushi restaurants that will do riceless rolls? I think I may have asked this before and got some info about other sushi restaurants in Seattle, but not specifically the one at PPM and I don't think I got an answer about "riceless" sushi. Thanks for any info! I just order sashimi and leave the rice. I haven't seen riceless sushi otherwise. Sushi is all about the rice if you read about it. I have a local restaurant that will make it for me without the rice. Maybe I'm just lucky! I know it's original intent may have been to be all about the rice and I can just eat sashimi, but I love the mix of sashimi, avocado and nor.
You just can't beat that flavor combo. Plain sashimi is doable, but not preferable ;) I've eaten sushi from that place if it's the one across from Top Pot. You can always ask for no rice, but I think most of the offerings are made up ahead of time. I'm guessing at Blue C they would make it however you wanted it. It is a kaiten place but the chefs are right there making stuff. It is not a high end sushi place so they wouldn't be offended. Located on 8th between Pike and Pine. If it's sushi AND teriakyi I'm guessing it's a pre made type place, meant as fast food. That doesn't necessarily mean it's bad, but there's a lot of good sushi in town so if your kids are really in to it, why not go somewhere you know is good (lots of info online)? Though Ainwa has a point, you might stick to mid level type places like Blue C if you are going to ask to have it made w/o rice. If you are crazy into sushi, watch the movie Jiro Dreams of Sushi and go to Shiro's. The elder apprentice in the movie now works there.
At that place, I would eat the rice even if it is not paleo-approved, unless you have an actual allergy. I do think it would be disrespectful to dissect it. Some restaurants stay open. If there's a sushi place IN the market, they would have to hang their heads in shame for not using fresh fish. However, the server informed them that omakase starts at $50 and is portioned for two people.  $75 offered three pieces of each, but did not affect the items served. The fresh caught uni (sea urchin) had a buttery flavor with a delicate hint of sea brine.  Geoduck, crisp and sweet, provided a contrast to rest of the sushi.  Although neither the tuna salad or the unagi (eel) stood out, the freshness of the fish shone through, especially for the hamachi (yellowtail).  The sushi rice, deserved note, in the balance of vinegar and sugar, tucked neatly beneath the sushi and dabbed with the perfect amount of wasabi – no soy sauce needed here. In addition to the omakase, they also ordered the spider roll, tamagoyaki, and spicy tuna roll.  The spicy tuna had just enough spice to be considered spicy without over-powering the tuna.  The spider roll had a shell that crunched without becoming chewy.  But the tamagoyaki (egg cake) was unlike any other she had in before.  Made by the apprentice in “Jiro Dreams of Sushi”, this sushi tasted like a honeyed egg cake, fluffy, springy, and sweet.
