It could be due to the method of cooking the squid but the texture upon eating resembled that of pasta. The vegetables were cooked well, however the squid lacked a dominant flavour which would have really brought the dish to life. The dish was cold which gave it an acquired taste and made the eating experience a rather unpleasant one!

sushi jersey city komegashiIt was the perfect combination with a drizzle of hoisin and orange sauce which was extremely moreish, especially considering there are two medium sized rolls in the bowl!

They were reminiscent of duck pancakes and had a truly lovely mix of textures. Salmon Teriyaki: Grilled fresh salmon glazed in a sweet soy sauce. This fell apart when eating (not the easiest thing with chopsticks!) but was cooked very well. The sweet sauce was not overpowering and complemented the fish. This was a hot dish and the sweet teriyaki was sticky and the perfect sauce for the fish. Buta No Kakuni: Slow braised belly pork and daikon in an aromatic sweet soy with rice. Daikon is a white radish vegetable and had a similar taste to pineapple as it was quite mild and sweet. This was a well balanced dish and the meat was very tender. The portion of rice was generous so this is a good one for a speedy lunch or to share. Seabass Nanbanzuke: “Barbarian Food” sweet and sour style Japanese seabass and pickles on rice. A complete dish where all elements worked together to create a sweet and sour sensation seabass. Fish was cooked very well and the rice absorbed much of the sauce which was extremely tasty.

Japanese Souffle Cheesecake: A soft and moist baked soufflé cheesecake. After much deliberation on the texture of this dessert, it was assigned as extremely light and soft - cloud-like, almost! It melted and disappeared in your mouth and there was a strong vanilla flavour. The strawberry lifted the taste and more of the fruit side would have made this dish near perfection.
