Going Out Best Bets, Jan. 5 to 11 Quinoa-and-black-bean salads in reusable bowls, lobster-and-brie grilled cheese sandwiches and butter chicken poutine with paneer in place of curds will be on the menu when the Rideau Centre opens a new eating area on Aug. 1. The old food court is to close July 31. The next day, a new one â to be called the Dining Hall â will open, featuring 10 new outlets as well as six of the old. The new dining hall will be at the mallsâ opposite end, on the ground floor of the space that was once Sears. Next spring, Nordstrom will open on the two floors above the new eating area. The changes are part of the mallâs $360-million upgrade. After the renovations, the Rideau Centre, which opened 31 years ago, will enter the upper echelon of Cadillac Fairviewâs 76 malls across North America. It will be one of only a few with a high-end eating area with lounge areas and fancy finishes, and one of only three with a âsculleryâ so that real plates and cutlery can be used, washed and reused.

The scullery, as well as a new ability to recycle used cooking oil and to send plate scrapings to compost, should mean that the mall will be able to divert 75 per cent of its waste away from landfill, up from the current 50 per cent, says operations manager Joe Bampton. âI think this is great for Ottawa,â says Ian OâMeara, who will open his fourth Green Rebel eatery in downtown Ottawa in the new dining area. âIâm very excited to be part of this. In particular, the scullery idea is fantastic. Quick-service restaurants create so much waste through packaging.â OâMearaâs menu at the Rideau Centre, as at his three other outlets, will focus on fresh salads, sandwiches and soups. His biggest sellers are a Taco Chicken Salad and Thai Chicken Soup, but he also sells popular quinoa-and-black-bean salads, a salad with strawberries and almonds, and one with lobster. The Brockville native, who was named one of Ottawaâs Top Forty Under 40 this year, has also introduced something he calls âthe Rebel bowl.â

Customers buy a reuseable, microwaveable bowl for $7 and get 50 cents off all future orders that are put into it. âI canât keep them on the shelves,â says OâMeara. âWe must have sold 7,000 of them already.â Aly and Rahim Moloo, Ottawa brothers who attended Hillcrest High School, say they are also excited to be part of the new dining hall. The pair opened MLT DWN, a grilled cheese restaurant, in Kingston in 2012. âWe started in Kingston because we wanted to make sure the concept would work, but weâre really excited to bring it home,â says Aly Moloo, whose Kingston restaurant has a 93 per cent rating on the food website urbanspoon and five out of five on Yelp. Theyâll serve the same menu at the Rideau Centre, with sandwiches ranging from the $4.50 classic grilled cheese to a $13 one made with three ounces of lobster, grainy mustard, brie, cheddar and fresh tarragon. Their most popular item is a pulled-pork sandwich made with a homemade tropical barbecue sauce, caramelized onions and jalapeno jack cheese, for $11.

âItâs all about using quality ingredients,â says Aly Moloo. âWeâre going to be featured on the Food Networkâs You Gotta Eat Here! I think weâll be the only food court outlet thatâs ever been on the show.â Amaya, a Toronto Indian-food company with a flagship restaurant that was highly rated by Globe & Mail food critic Joanne Kates, and with outlets in six Toronto food courts, will open its first counter outside the Greater Toronto Area. âIâve travelled to Ottawa quite a few times and, every time, I notice that high-quality Indian food, made with local ingredients, is not well represented there,â said Hemant Bhagwani, chef and owner of Amaya. Already, Amaya sauces are sold in jars at some Ottawa-area food stores. âWe carry Amaya sauces â they are wonderfully flavourful,â said Lise Ladouceur, co-owner of Peches & Poivre food store in Almonte. âI knew they had restaurants in food courts in Toronto, but did not know about the coming to Ottawa. Amaya: A Toronto-based company that includes Indian restaurants, fast-food outlets and prepared foods.

Big Smoke Burger: A Toronto-based chain with outlets in southwestern Ontario, the U.S. and Middle East thatâs famous for its Big Smoke Burger made with horseradish mayo, caramelized onions and smoked cheddar. Grillades Torino: A company with nine outlets in the Montreal area that specializes in Mediterranean-style grilled chicken and meat. MLT DWN: A Kingston grilled cheese restaurant run by brothers from Ottawa. Place Tevere:  A Montreal-based chain that started with an Italian restaurant in Montreal in 1968 and now has 19 locations in three provinces. Shanghai 360: Part of the North-America-wide Innovated Restaurant Group that includes Bourbon St. Grill, Ruby Thai Kitchen, Nori Japan and Stir Fry 88 outlets, Shanghai 360 will specialize in dumplings such as pot stickers and wontons made in an open kitchen. UMI Sushi Express: Part of the Famous Wok Group that began with a buffet restaurant in Saskatoon in 1986, UMI Sushi Express is a chain with more than 125 outlets across Canada selling Japanese-style sushi, soup, tempura and salads.
