Especially on a glorious summer’s evening, watching the twilight gradually transform the city below. It was against this backdrop that we sampled the brand new cocktail menu at Shanghai Bar, the dimly-lit drinking den at acclaimed 33rd-floor Chinese restaurant Hutong.

Pared-back and subtly flavoured, these are cocktails “for people who don’t really like cocktails”, our waiter informs us; an alternative to a pre-dinner G&T. We kicked off with the Mei Shi: a vodka-based twist on a lychee martini with a delicate egg-white foam that was sherbet flavoured rather than knock-your-socks-off sharp. The Chilli Julep was similarly restrained and unexpectedly sweet thanks to the combination of Disaronno, passion fruit and honey; delicious, although serious spice-seekers would be left disappointed. The Cachaça-and-watermelon Summer Palace, served in a can-shaped glass as a reference to Chinese beer, is summery and refreshing, while the tequila and ginger-based Sheng Jiang tastes as reinvigorating as a cocktail can do without veering into green-juice territory. “We like to keep it simple – we’ll experiment with the flavours as far as possible, then take it back down a notch,” explained our waiter. Some of the foodstuff tie-ins are a little forced: the chocolate and sesame seed pancakes served atop a lotus leaf with the Old Peking Fashioned – a nod to the restaurant’s famous Peking Duck – were a distraction from the strong, complex drink itself.

But as the sunset faded and the city put its twinkling night jacket on, we were grateful for the sustenance: the bar stops serving snacks at 5pm, and these concoctions are far more potent than their carefully balanced flavours might suggest. A stream of well-heeled couples and business partners wisely made their way to or from the restaurant, but there’s enough to explore on the bar menu that it’d be all to easy to settle in for the evening. Our bartender couldn’t send us on our way without mixing up his personal favourite: the Fui Shi, comprising Zacapa 23-year-old rum, orange curaco, grenadine and blue cornflower.
