It started as a wholesale lobster company that over the next few years moved to Waite’s Wharf in Newport. Anthony and his dedicated employees turned the new location into a successful seafood production plant followed by a fresh fish retail outlet. In the 1980’s, the Bucolo’s entered the restaurant business with a one of a kind floating restaurant – the SS Newport. In 1987 Anthony Bucolo retired and sold Waite’s Wharf and Anthony’s Seafood.

However in 1989 Anthony brought his sons Stephen and Michael, who had worked under him for many years back to Waite’s Wharf and re-opened Anthony’ Seafood and the Shore Dinner Hall. For the next eight years the Bucolo’s and Waite’s Wharf became a local destination and a popular tourist spot.

Our unique bacon flavors are a balance of high quality ingredients blended with smoke. There is no assembly line here we hand select our pork bellies for the perfect ratio of fat to meat then Individually pack each for curing with our own blend of spices. This is 100% natural no binders, fillers, extenders or emulsification just tender, moist meat, leaving texture and flavor as they’re meant to be. Our bacon is then hot smoked unlike the commercial bacons that are cold smoked or liquid dipped. Our process create a better tasting and higher quality product with true smoke flavor. We load our smoker carefully and then manage the perfect amount of time and temperature inspecting often throughout the process and individually tasting every batch.

Another specialty we complete on premise is Dry-Ageing our own beef more a minimum of 21 days using only USDA Top Choice and Prime grade beef. During the dry aging process much of the moisture evaporates this causes the enzymes in the meat to break down the meats proteins. This process creates a very tender product that has a distinct concentrated beef flavor. Prior to the expansion of refrigeration and vacuum packaging Dry aged beef was the norm. Beef was allowed to hang in a locker for a few weeks after slaughter to become more tender and flavorful. During dry-aging, moisture evaporates from the muscle creating a mature beef flavor. The meat’s natural enzymes break down the fibrous, connective tissue in the muscle thereby tenderizing it. While traditional dry aging practices have a positive impact on flavor and tenderness. We are proud to offer bread, milk, eggs, and salsa from local farmers and artisans.
