And when it comes to etiquette, there are a few additional things you should remember if you're going to a restaurant. For starters, most spots won't appreciate you rubbing your wooden chopsticks together — this is often considered an insult to the restaurant because you're implying their chopsticks are cheap. Recently, I had dinner in a Japanese restaurant with a guest who had never tasted sushi before. Now most people reading this blog have probably eaten plenty of sushi — at sushi bars, in Japanese restaurants and from the refrigerated case at the supermarket. But to enjoy the experience at a sushi bar to the fullest, you might want to keep these six tips in mind. 1. Fingers are fine.

some of Dallas’ top sushi bars follow that custom. If you do plan to eat with your fingers, just ask to keep the hot towel — keep it folded neatly on the right side of your spot at the counter, and dab your fingers on it as necessary. 2. Ask for fresh wasabi. The best sushi bars offer fresh wasabi — the head-clearingly spicy green Japanese horseradish paste that comes in a little mound with pickled ginger on the sushi platform. If they have it, there will be an upcharge — about $2 to $6 — but it’s well worth it. Whether or not you’ve ordered it fresh, the sushi chef should be putting a dab of wasabi inside the nigiri sushi, when appropriate (nigiri is the type of sushi that’s a slice of fish atop rice). If you’d like more, you can put a dab of wasabi (using your chopsticks) directly on top of the fish. Or you can mix a little in the soy. If you don’t like wasabi, ask the chef to leave it out. 3. Don’t fill that little dish with soy sauce — just put in a little.

Enough to make a puddle about the size of a nickle or quarter. At the best sushi bars (and we only have a couple at this level in the Dallas area), the sushi chef will tell you which sushi items need sauce — he’ll be saucing many of them himself. But in Dallas, you’ll usually need to dip the sushi in soy. If you do, be sure to dip it upside down, dipping the fish, but never the rice. 4. If you’re sitting at the sushi bar, don’t order a slew of items at once. In Japan and in L.A. (home to many of the world’s best sushi bars outside of Japan), it’s customary to order sushi one at a time. At its best, sushi is meant to be eaten immediately as it is prepared. 5. Don’t order crazy rolls. Start with sashimi, continue with nigiri, then order a roll. First, asking the chef what’s great for sashimi that day. If you like wasabi, put a dab atop each piece, then dip and eat. Then move on to nigiri, then finish with a roll — ordering a hand-roll definitely marks you as a pro.

(Note: The nori, or seaweed wrapper, should be crisp.) 6. Know the cool-kid seafood choices, like Spanish mackerel, uni, shad, abalone. If you have any sort of environmental consciousness, say no to bluefin tuna or bluefin toro. Most tuna served in U.S. sushi bars is bigeye tuna. If you’re a scofflaw and your sushi chef is too, go for the Kumamoto oysters — they’re a real treat (it is illegal to serve Pacific oysters in Texas, but a few sushi bars do anyway).
