Hong Kong Gets Sushi Delivered Direct to Your Table by High Speed Train Sushi a la high speed (model) train , May 12, 2016 9:37am (updated) Genki Sushi, a ubiquitous franchise sushi chain in Hong Kong, is opening a branch of stores in the city that features fully-automated service using model trains. Called kousoku (高速线, “high speed line”), Genki Sushi’s new branch at Tsuen Wan Plaza will use model trains to quickly transport restaurant orders and slow down when they’re approaching customers’ tables throughout the store’s three floors. Designed after the Shinkansen bullet trains in Japan, the store has 24 kousoku “tracks” that can serve 158 people. Customers won’t ever need to talk to a human being. They can order their meal on a tablet, and pay using an Octopus or Paywave card, which are common in Hong Kong. Genki Sushi Hong Kong has plans to further open more fully-automated service stores throughout the city later this year.

The franchise has been operating in Hong Kong since 1995, but this is the first kousoku store in the city. Genki Sushi has had kousoku stores in neighboring Singapore since 2011.
