The Jogasaki 1A is one of the truck's signature sushi burritos. If you're not familiar with the sushi burrito, before you start imagining a large flour tortilla stuffed with spicy tuna, avocado, imitation crab and salsa, let's break down the concept for you.

It's a burrito-sized handroll stuffed with spicy salmon, soft-shell crab, barbecued eel and sushi rice, all wrapped in soy paper spotted with sesame seeds.
